Tzatziki (Traditional Greek garlic & yogurt sauce/dip

The following recipe comes from
another greek friend.
I have tried it out and it was even nicer
then my own recipe.Here is is.

Got some yogurt that's gone a bit sour?

Well, don't throw it away because Tzatziki tastes best

when made with strained yogurt that's gone a bit sour.


You'll need:
1 cucumber
1 clove of garlic
1 table spoon of natural vinegar
salt
pepper
1 table spoon of olive oil

First, peel the cucumber and collect the 'flesh' (not the seeds) of the cucumber
in a plate by grating it all around the seedy center.
You won't need the seeds. Why not add a pinch of salt and munch on
them as you continue with the Tzatziki

Second, strain the cucumber flesh as best as you can.
Just squeeze all the water out with your hand and put it back in the plate.

Third, finely grate the garlic onto the cucumber and mix.
Then,add the vinegar, salt, and pepper and mix again well,
so that the garlic spreads throughout the mixture.

Fourth, add a cup of yogurt (about 200g, preferably strained
because the less water in the tzatziki, the better) and mix everything.

Finally, add the tablespoon of olive oil and remix well.

That's it! Store in the fridge. It will last for over a week.
You may see some water rise to the surface during storage over time
but not to worry, just drain it out.

Excellent side dish with most meat, as a spread on freshly baked bread
or a dip with fried potatoes.
Not recommended late in the evening if you have a sleeping partner
unless you've both eaten it,
and definitely not recommended before an interview or meeting.

Highly recommended for people with hypertension (high blood pressure) and high cholesteral count.
